A santoku is a Japanese all-purpose kitchen knife. Like a chef’s knife, the santoku is used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, the name refers either to the three types of foods it works well with—vegetables, poultry, and fish—or for the three types of cuts at which it excels—slicing, dicing, and chopping. Hollow-ground indentations on the blade help reduce friction so the blade glides through the food more easily. When we first introduced the Shun Classic Hollow-Ground Santoku to the market, it was named “Kitchen Knife of the Year” by Blade magazine. Shun Utility Knife 15cm

MULTI-PURPOSE—AND VERY HANDY

In size, the Shun Classic Utility Knife is between a chef’s knife and a paring knife, but its blade is narrower and straighter. It's perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Its very slightly curved belly enables it to do moderate rocking cuts. It’s nimble enough to peel an onion in hand, then slice it up in short order. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.

Shun's Combination Whetstone offers you two grits: a fine 1000-grit side and an even finer 6000-grit side. Since you won't want to let your Shuns get too dull before sharpening, this stone is a good choice because it lets you put a keen edge on your Shun with the 1000-grit side, then polish it to perfection with the 6000-grit side. The Shun Combination Whetstone is a double-sided Japanese waterstone. You will need to thoroughly soak this whetstone before sharpening.
